Tasting Note

Elegant, floral and fruity Junmai Daiginjo: notes of strawberry, white peach and vanilla, silky texture, layered umami, gentle citrus acidity and a clean, lingering finish.

Production Method

Junmai Daiginjo made from Aiyama rice polished to ~40%, low-temperature fermentation and careful maturation; typically chilled and sometimes aged briefly before release.

Produced by Sumikawa Sake Brewing Co. (Toyo Bijin), founded 1921 in Hagi. Fourth-generation brewmaster Takafumi/Yoshifumi Sumikawa trained under Takagi Shuzo and focuses on fruity, elegant premium sake.
