Tasting Note
Plush blackcurrant and black cherry with graphite, cedar and tobacco. Full-bodied, polished yet firm tannins, savory earth/mineral notes and layered spice. Long, mouth-coating finish with leather and cocoa hints.

Western: roast lamb, grilled ribeye, beef short ribs, mushroom risotto, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ (bulgogi), miso-glazed aubergine, moderately spicy Sichuan beef.
Production Method
Hand-harvested; fermented in temperature-controlled vats with extended maceration; malolactic fermentation completed sous marc; aged 12 months in French oak (30% new, 70% one-wine barrels).
