Tasting Note
Plush black cherry, blackberry and cassis with cedar, graphite, tobacco and subtle spice. Silky, full-bodied palate with ripe fruit, polished tannins and a long, earthy finish.

Roast lamb, beef ribeye, daube, duck confit; Asian: Peking duck, char siu, Korean BBQ (bulgogi/calmchi), braised beef short ribs with soy/ginger.

Production Method
Hand-harvested, fermented in temperature-controlled stainless steel vats with malolactic fermentation; aged ~12 months in French oak (c.30% new / 70% one‑year barrels).
