Tasting Note
Merlot-led Pauillac: black cherry, blackberry and plum with cedar, cigar-box and warm spice. Silky attack, firm Pauillac tannins and a long, earthy, chocolate-tinged finish.

Food Pairing
Western: roast lamb, ribeye/steak, beef bourguignon, duck confit. Asian: Peking duck, char siu, Korean BBQ (galbi), braised beef short ribs, umami mushroom hot pot.

Production Method
Hand-harvested, fermented with gentle extraction; aged ~18 months in oak barriques (≈40% new, 60% one-year barrels).
