Tasting Note
Dark cherry and black-fruit core with notes of graphite, tobacco, violet and baking spice. Medium-full, fresh palate with fine, chalky tannins, mineral backbone and a long, saline finish.

Roast lamb, beef steak, mushroom risotto; aged cheeses. Asian: Cantonese roast duck, char siu, beef bulgogi, braised short ribs.
Production Method
Hand-harvested, organic conversion practices; fermentations with minimal intervention, aged in oak (approx. 40% new) with light sulfur addition at end of élevage.
