Tasting Note
Deep blackberry and blood-plum fruit with violets, pencil shavings and cured-meat/iodine savoury notes. Full-bodied and plush with mocha, black pepper and olive-tapenade undertones, fine powdery tannins and a long, layered finish.

Western: grilled lamb, beef short ribs, braised brisket, aged hard cheeses. Asian: Korean BBQ, Sichuan pepper beef, hoisin duck, charred eggplant with miso, rich Malaysian rendang.
Production Method
Destemmed to open wooden/concrete fermenters (6–7 days on skins), basket-pressed, natural malolactic fermentation in barrel. Aged ~30 months in French oak barriques (≈50% new) resting on fine lees; ~2% Viognier blended.
