Tasting Note
Deep, concentrated black and blue fruits—blackberry, black cherry and satsuma plum—layered with dark chocolate, espresso, licorice, tar and native eucalypt. Plush, powerful palate with integrated oak, firm fine-grained tannins and an exceptionally long, savory finish.
Food Pairing
Western: grilled ribeye, roast lamb, beef bourguignon, aged hard cheeses. Asian: Korean BBQ (galbi), char siu / roast pork, Sichuan-style beef, teriyaki beef or beef satay with peanut sauce.
Production Method
Hand-harvested, destemmed and fermented in small open-top fermenters with extended maceration; basket-pressed and matured ~36 months in 100% new French oak barriques; bottled unfined and unfiltered after cellaring.
