Tasting Note
Golden-amber, oxidative white with toasty American-oak, smoky mushroom, dried citrus, fennel and herbal tea. Medium-bodied, saline and umami-rich with bright acidity and a long, savory finish.

Food Pairing
Western: grilled or roasted white fish (turbot, sea bass), seared scallops, mushroom risotto, roast chicken with herb sauce, aged Manchego. Asian: miso‑glazed cod, sushi/sashimi (salmon), tempura prawns, Cantonese roast pork or braised pork belly, umami-rich soy/miso dishes.

Production Method
Hand-harvested Viura and Malvasía; pressed without stems; fermented in large, old oak tuns with indigenous yeasts; aged ~6 years in used American (neutral) oak, racked twice yearly, fined with egg white and bottled unfiltered after extended bottle aging.

R. López de Heredia family estate. Viña Tondonia planted 1913–14 in Haro; estate-grown fruit, traditional craft coopery and long cellar aging underpin classic Tondonia style.
