Tasting Note
Natural amber-gold; honeyed dried apricot, mandarin peel, hazelnut, beeswax, toasted vanilla and subtle oak, with chalky mineral notes, bright acidity and a long, savory finish.

Food Pairing
Western: grilled shellfish, salt-baked sea bream, seafood paella, mushroom risotto, pasta with truffle & Parmesan, soft cheeses (Brie, aged Manchego). Asian: ceviche/sashimi, miso-glazed black cod, tempura, steamed ginger-scallion fish, soy/mirin glazed seafood, lightly spiced Thai seafood dishes.

Production Method
Hand-harvested Viura and Malvasía; fermented in large wooden vats, aged ~72 months in used American oak, racked twice yearly, fined with egg whites, bottled unfiltered with extended bottle aging.

Bodegas R. López de Heredia (Viña Tondonia) — family-owned, traditional Rioja house founded in the late 19th century; owns the Viña Tondonia estate (acquired/established 1913) and ages wines extensively in underground cellars.
