Tasting Note
Golden-amber; aromas of toasted nuts, marzipan, white truffle, dried pineapple, seaweed and honeyed citrus. High acidity with nutty, saline, slightly oxidative character, creamy texture and a very long, nutty finish.

Food Pairing
Western: grilled/roasted shellfish, sea bass, truffle pasta, mushroom risotto, roasted chicken, aged Manchego, foie gras. Asian: miso-glazed black cod, grilled scallops, tempura prawns, umami-rich shiitake dishes, sushi/sashimi (oily fish), Thai coconut fish curry.

Production Method
Hand-harvested; basket-pressed; fermented in large oak tinas on indigenous yeasts; aged six years in American oak barrels, racked twice yearly, fined with egg whites and bottled unfiltered after extended bottle aging.

Vineyard Info
Bodegas R. López de Heredia (family estate, founded 1877). Viña Tondonia vineyard (planted 1913–14) on the right bank of the Ebro; old vines on alluvial clay-limestone soils; strict traditional practices and long cellar ageing.
