Tasting Note
Developed golden color; aromas of honey, caramel, Earl Grey tea, beeswax, and lemon zest. Flavors of mushroom, wet chalk/diesel, dried citrus and stone fruit; lively acidity, round texture and a long, saline finish.

Food Pairing
Western: roasted/ grilled oily fish (mackerel, tuna), hake, roast chicken, pork belly, creamy seafood dishes, aged manchego. Asian: miso-glazed cod, tempura prawns, sushi (fatty tuna), Thai coconut curry, teriyaki pork.

Production Method
Hand-harvested Viura and Malvasía. Fermented and matured about six years in well-seasoned (neutral) American oak casks; racked twice yearly, fined with egg white, bottled after extended ageing.

Bodegas R. López de Heredia (est. c.1877) of Haro. Viña Tondonia vineyard founded 1913–14; family-run, traditional Rioja producer known for long barrel ageing and cellar ageing before release.
