Tasting Note
Deep golden with beeswax, hazelnut, dried apricot, saffron and lanolin aromas. Dry, silky palate with chalky minerality, citrus and toasted-almond notes, saline twist and a long, persistent finish.

Food Pairing
Western: grilled sea bass, lobster, seafood risotto, roast chicken, cod al pil-pil, aged hard cheeses. Asian: sashimi/sushi, prawn tempura, miso-marinated black cod, steamed Chinese fish, Thai/seafood coconut curries.

Production Method
Hand-harvested; native-yeast fermentation in large oak vats; aged ~10 years in well-seasoned American oak barrels/foudres; racked twice yearly, fined with fresh egg white and bottled unfiltered with extended cellar ageing.
