Tasting Note
Complex dried red fruit, forest floor, leather, truffle, vanilla and spice. Dry, vibrant acidity with firm yet integrated tannins, toasted oak and savory mineral notes; long, elegant finish.

Food Pairing
Western: roast lamb, grilled beef, game, roast pork, cured Iberian ham, mushroom risotto. Asian: Peking duck, char siu, hoisin- or soy-marinated grilled beef, Korean BBQ, umami mushroom stir-fries.

Production Method
Hand-harvested; extended ageing (~10 years) in estate American oak (racked twice yearly), egg-white fined and bottled unfiltered after long barrel and bottle maturation.
