Tasting Note
Pale gold with citrus peel, dried apple, walnut, praline, honeysuckle and mushroom/forest-floor notes; bright, tangy acidity, medium body and saline, savory finish.

Western: grilled or fried fish, cod, trout almondine, seafood paella, roast chicken, aged Manchego, rich pasta. Asian: miso-glazed black cod, tempura prawns, sushi (salmon/ahi), steamed ginger-scallion fish, light Thai fish curries.
Production Method
Fermented and aged in American oak casks; matured about four years in barrel, racked twice yearly and fined with fresh egg whites before bottling.
