Tasting Note
Fresh red fruit (cherry, raspberry, plum), dried flowers, leather, cedar and spice; bright acidity, polished but present tannins and a long, savory, slightly earthy finish.

Roast lamb, beef stew, grilled chorizo, aged Manchego; Korean BBQ, char siu, Peking duck, teriyaki beef, shiitake/mushroom hotpots.

Production Method
Hand-harvested from estate vines; fermented and matured ~60 months in used American oak barrels, racked twice yearly, fined with egg white, bottled unfiltered and further bottle-aged before release.
