Tasting Note
Ripe dark-plum and blueberry fruit with vanilla, cedar, tobacco and dried florals; medium–full body, rounded tannins and a persistent savory finish.

Food Pairing
Western: roast lamb, grilled ribeye, game, aged Manchego; Asian: char siu, Peking duck, beef bulgogi, miso-glazed eggplant, mushroom hot-pot.

Production Method
Fermented and aged ~5 years in (used) American oak barrels, racked twice yearly and fined with fresh egg whites; bottled unfiltered after extended cellar aging.
