Tasting Note
Deep ruby with orange rim. Aromas of mature red and black fruit, leather, tobacco, dried fig and balsamic notes. Palate is round, fresh, medium-to-full-bodied with fine dusty tannins, savory oak and a persistent, elegant finish.

Food Pairing
Roasted and highly flavoured meats, lamb, beef, game, aged Manchego and other hard cheeses. Asian pairings: char siu, Korean BBQ, teriyaki beef, braised pork belly, rich mushroom dishes.

Production Method
Hand-harvested, traditional fermentation. Aged 5 years in used American oak barrels, racked twice yearly, fined with egg whites, unfiltered and bottled by hand.
