Deep ruby with orange edges. Aromas of ripe cherry, plum, leather, tobacco, dried herbs and subtle vanilla. Palate is round and full-bodied with bright acidity, firm fine tannins and a long, savory finish showing spice and forest-floor notes.

Food Pairing

Western: roast lamb, grilled steak, suckling pig, roast pork, game and aged cheeses. Asian: Peking duck, char siu, Korean BBQ, braised beef noodle soups, Sichuan-style lamb skewers and miso-glazed aubergine.

Production Method

Hand-harvested estate fruit; fermented with native yeasts in traditional tinos; aged ~5 years in used American (old) oak barrels, racked twice yearly, fined with egg white and bottled unfiltered.
