Tasting Note
Deep ruby with orange rim. Mature black-fruit compote, tobacco, leather, cedar and baking spice. Velvety, polished tannins, bright acidity and a long, chocolate-tinged finish.

Western: roasted lamb, braised beef, game, grilled pork, aged cheeses. Asian: Peking duck, char siu, Korean bulgogi/galbi, spicy Sichuan beef, teriyaki beef.
Production Method
Fermented with native yeasts in traditional tinos; aged five years in used American oak, racked twice yearly, fined with egg whites and bottled unfiltered.
