Tasting Note
Deep ruby; aromas of black cherry, dried berry, raisin, tobacco and black pepper. Full-bodied with silky tannins, cocoa and spicy-savoury notes; long, warming, spicy finish.

Western: grilled or braised red meats, osso buco, veal parmigiana, aged cheeses; Asian: Korean BBQ (bulgogi), Chinese char siu, teriyaki beef, spicy Szechuan dishes, yakitori.
Production Method
Fermented in stainless steel, then refermented on Amarone pomace (Ripasso) for ~12 days; aged 15–18 months in large Slavonian oak casks (65 hl) and bottle-aged.
