Tasting Note

Deep ruby; aromas of black cherry, dried fig, clove and dark chocolate. Medium‑full, silky tannins with sweet red cherry, raisin, black pepper and tobacco flavors; long, spicy finish.


Food Pairing

Western: pasta Bolognese, osso buco, grilled steak, braised beef, aged Parmigiano‑Reggiano. Asian: Peking duck, char siu, beef bulgogi, mushroom hot pot, Korean BBQ.


Production Method

Fermented in stainless steel, refermented on Amarone pomace (Ripasso) ~12–13 days; aged ~18 months in 65 hl Slavonian oak casks, plus bottle aging.
