Tasting Note
Ripe red cherry and plum with raisin, black pepper, chocolate-orange and dried herb notes. Medium-full, velvety texture, fine tannins and a spicy, persistent finish.
Food Pairing
Western: roasted lamb, beef ragu pasta, aged pecorino, mushroom risotto. Asian: grilled Korean BBQ, teriyaki beef, char siu, mildly spicy Mapo tofu.
Production Method
Vinified in stainless steel (≈9–10 days), re-fermented on warm Amarone pomace for ≈12 days (Ripasso), then aged ~18 months in Slavonian oak casks and bottle-aged before release.
