Tasting Note
Deep ruby with garnet hues. Concentrated dried black cherry, plum and blackberry, with licorice, bitter cocoa, tobacco and tertiary leather/smoke notes. Full-bodied, velvety texture, firm yet polished tannins and a long, savory finish.
Food Pairing
Western: braised beef, roasted/game meats, osso buco, aged cheeses. Asian: Peking duck, char siu, Korean barbecue (bulgogi), Sichuan braised beef or rich mushroom hot pot.
Production Method
Selected grapes dried (appassimento) ~100 days on arele, pressed in January, slow fermentation (~30 days), aged 4 years (1 year in barrique, 3 years in Slavonian oak casks) and bottle-aged.
