Tasting Note

Deep ruby with garnet hues. Rich dried cherry, prune and raisin fruit, with cocoa, tobacco, black pepper and wild herb notes; full-bodied, velvety texture, firm yet polished tannins and a long, spicy finish.

Western: aged Parmigiano-Reggiano, braised beef, roasted lamb, venison, osso buco. Asian: Peking duck, Cantonese roasted meats, Korean BBQ (galbi), Sichuan braised beef, Hong Shao (red‑braised) pork belly.


Production Method

Traditional appassimento: grapes dried ~3–4 months, fermented in stainless steel, then aged ~30 months in large Slavonian oak casks (35 hl).
