Tasting Note
Rich dark cherry and plum with dried fruit, sultana and violets, layered with spice, cocoa, tobacco and leather. Full, velvety texture with polished tannins and long, savory finish.

Aged cheeses, braised beef, roast venison, game ragù, mushroom risotto; Asian: Peking duck, char siu, Korean BBQ (galbi), braised pork belly, beef rendang.

Production Method
Traditional appassimento (grape drying for ~3–4 months), slow fermentation, aged ~30–36 months in large Slavonian oak casks (35hL) before bottling.
