Tasting Note
Perfumed red cherry and raspberry, wild berry and floral lift with sweet spice, crushed-stone minerality, fine powdery tannins, medium body and bright acidity leading to a long, savory finish.

Food Pairing
Western: roast duck, duck confit, mushroom risotto, coq au vin, beef bourguignon, Époisses/Comté. Asian: Peking duck, char siu (Cantonese BBQ pork), miso-glazed aubergine, bulgogi, soy-sesame roasted mushrooms.

Production Method
Mostly de-stemmed Pinot Noir, temperature-controlled fermentations and 14–18 months in French oak barrels (≈20–30% new). Minimal intervention, limited SO2 at bottling.

Historic family domaine (founded 1880), ~24 ha in Côte de Beaune; led by Nathalie, Olivier and Jean‑Paul Tollot. Les Lavières parcel is mid-slope, limestone 'lavières' soils, old vines, lutte raisonnée/organic practices.
