Tasting Note
Silky Pinot with bright red cherry, wild strawberry and violet, backed by flinty minerality, subtle spice and fine-grained tannins; fresh acidity and a long, elegant finish.

Western: duck confit, roast chicken, mushroom risotto, pork belly, soft cheeses (Époisses, Comté). Asian: Peking duck, miso-glazed salmon, char siu (roast pork), mushroom ramen, Korean bulgogi.

Production Method
Hand-harvested Pinot Noir; partial whole clusters (~40%); fermentation in cement/stainless; aged ~16 months in French oak (≈25–30% new).
