Tasting Note

Fresh red and black cherry, cranberry and wild strawberry with damson and violet notes, subtle spice and light char from oak. Silky texture, medium body, refined tannins, bright acidity and a clean savory finish.

Western: roast duck, roast lamb, grilled beef, mushroom risotto, charcuterie, aged soft cheeses. Asian: Peking duck, char siu or hoisin pork belly, miso-glazed salmon, soy-braised short ribs, shiitake-based dishes.


Production Method

Hand-harvested Pinot Noir, mostly de-stemmed; fermented in vats and aged 12–16 months in French oak (≈25–30% new). Lutte raisonnée viticulture, minimal intervention winemaking.

Domaine Tollot‑Beaut, family domaine since the late 19th century. Owns the 1.46 ha Champ Chevrey monopole; estate totals ~24 ha across the Côte de Beaune, run by Nathalie and family.
