Tasting Note

Bright red cherry, raspberry and plum with violet florals, forest-floor/earth notes, subtle spice and gentle toast from oak; silky tannins, fresh acidity and a mineral-tinged, medium-long finish.

Western: roast duck, coq au vin, mushroom risotto, beef bourguignon, pork belly. Asian: Peking duck, miso-glazed salmon, teriyaki beef, mushroom hot pot, char siu pork.


Production Method

Mostly destemmed Pinot Noir; open-top fermentations with gentle punchdowns; matured 16–18 months in French oak (approx. 25–35% new).

Domaine Tollot-Beaut (family estate, founded late 19th century). Champ Chevrey is a Tollot-Beaut monopole (~1.46 ha) planted with old Pinot (Pinot Fin) and farmed using lutte raisonnée.
