Tasting Note
Bright red and black cherry, blackberry, briar and violet with earthy, savory notes, cedar spice and a mineral finish. Silky, ripe tannins and balanced acidity with a medium–long finish.

Food Pairing
Western: roast duck, beef bourguignon, mushroom risotto, grilled lamb. Asian: Peking duck, char siu (barbecue pork), Korean BBQ, mushroom-based stir-fries, mildly spicy Szechuan dishes.

Production Method
Hand-harvested, grapes mostly destemmed; 10–15 day fermentation with daily punch-downs in stainless steel/cement; aged 16–18 months in French oak (c.30–35% new).

Vineyard Info
Family domaine since late 19th century. Pièce du Chapitre is a Tollot‑Beaut monopole (planted c.1950), ~1.47 ha of old Pinot vines, acquired by the domaine in 2001.
