Tasting Note
Bright red and black cherry, blueberry, hints of dried orange peel, earth and spice; supple tannins, medium-to-full body, lively acidity, gentle vanilla/oak and a lingering mineral finish.

Food Pairing
Western: roast duck, duck à l'orange, coq au vin, beef bourguignon, mushroom risotto. Asian: Peking duck, char siu, soy-braised short ribs, mushroom ramen, bulgogi.

Production Method
Hand-harvested Pinot Noir; fermented in open vats with daily punchdowns, malolactic fermentation, aged ~16–18 months in French oak (≈25% new).
