Tasting Note
Bright, perfumed Pinot with juicy red and dark cherry, blackberry, spice, sandalwood and toasty oak. Medium-bodied, tangy acidity and slightly firm, rustic tannins with a lingering spice-tinged finish.

Food Pairing
Western: roast duck, coq au vin, beef bourguignon, mushroom risotto, charcuterie, Comté. Asian: Peking duck, miso-glazed salmon, mushroom ramen, char siu, mildly spiced Korean BBQ.

Production Method
Mostly de-stemmed Pinot Noir; open-vat fermentation with daily punchdowns, malolactic fermentation in barrel, aged 16–18 months in French oak (≈20–25% new).

Tollot-Beaut, family domaine founded c.1880 (run by Nathalie/Jean-Paul Tollot). Owns ~60 acres including Chorey parcels; known for old vines and careful viticulture.
