Tasting Note
Bright red cherry and raspberry with rose-petal florals, light earth and savory minerality; subtle vanilla and spice from oak, silky texture, lively acidity and a medium savory finish.

Food Pairing
Western: roast duck, mushroom risotto, coq au vin, grilled salmon, charcuterie and roast pork. Asian: Peking duck, char siu (Cantonese BBQ pork), miso-glazed black cod, Korean bulgogi, umami mushroom stir-fry.

Production Method
Mostly de-stemmed Pinot Noir, open-vat fermentation with daily punchdowns; malolactic fermentation; ~18 months in French oak barrels (≈25% new).
