Tasting Note
Medium-bodied Pinot Noir: red cherry, raspberry, cranberry, cinnamon, orange peel, subtle earthen/mineral notes, fine tannins and fresh acidity with a long, structured finish.

Food Pairing
Western: roast duck, beef bourguignon, mushroom risotto, game birds, roasted pork. Asian: Peking duck, char siu, mushroom ramen, braised pork belly, teriyaki salmon.

Production Method
Hand-harvested Pinot Noir; mostly destemmed fermentation in temperature-controlled tanks, matured ~14–16 months in French oak (approx. 25–30% new). Traditional Burgundian élevage.

Domaine Tollot‑Beaut is a family domaine dating to the late 19th century; domaine-bottling since 1921. Now run by the fifth generation (Nathalie and cousins), owning ~24 ha across Chorey, Savigny, Aloxe and Beaune. Les Grèves parcel planted in late 1960s.
