Tasting Note
Perfumed, floral nose of black cherry and raspberry with briary dark-fruit, bay and wild-hedgerow notes. Medium-bodied with fine mineral core, gentle grip and a calm, assured finish.

Food Pairing
Roast duck, coq au vin, mushroom risotto, beef bourguignon; Asian: Peking duck, char siu, miso‑glazed salmon, braised pork (hong shao), Korean bulgogi with mushrooms.

Production Method
Hand-harvested Pinot Noir; destemmed, fermented in stainless steel (10–15 days) with punch-downs/pump-overs; aged 16–18 months in French oak (c.20% new).
