Tasting Note

Pure red cherry and raspberry with summer truffle, undergrowth and mineral notes; delicate spice and earth, bright acidity, velvety mid‑palate and a lingering spice-tinged finish.


Food Pairing

Western: roast duck, magret de canard, beef bourguignon, lamb, mushroom risotto. Asian: Peking duck, char siu, miso-glazed aubergine or salmon, mushroom hot pot, Korean bulgogi.


Production Method

Traditional fermentation (stainless and cement vats) with punch‑downs; malolactic fermentation and 12–18 months aging in French oak (approx. 30–50% new).

Family domaine founded late 19th century in Chorey‑lès‑Beaune; ~24 ha run by Nathalie, Jean‑Paul and Olivier Tollot. Traditional viticulture, hand-harvested fruit and restrained use of new oak.
