Red cherry, red plum, violets, earth and spice; bright acidity, moderate tannins and a mineral-tinged finish.

Food Pairing
Western: roast duck, coq au vin, mushroom risotto, beef bourguignon, grilled salmon. Asian: Peking duck, char siu, miso-glazed salmon, Korean bulgogi, mushroom hot pot.

Production Method
Hand-harvested, mostly destemmed Pinot Noir; fermented with gentle extraction (open vats) and matured ~18 months in French oak (≈30% new for village level).
