Tasting Note
Red cherry and red-plum fruit with violet florals, earth and mineral undercurrent; bright acidity, chalky-moderate tannins, subtle spice and oak-derived vanilla. Medium-bodied, elegant and perfumed with a savory, persistent finish.

Food Pairing
Western: roast duck, rib steak, mushroom risotto, coq au vin; Asian: Peking duck, char siu, soy- or miso-glazed salmon, teriyaki chicken, mushroom & umami-rich dishes.

Production Method
Hand-harvested, mostly de-stemmed Pinot Noir; fermented in stainless-steel/cement vats with regular punch-downs; aged ~18 months in 25–33% new French Burgundian oak (228L pièces).

Domaine Tollot-Beaut, family domaine since the late 1800s and bottling estate wines since 1921. About 24 ha across Chorey-lès-Beaune, Aloxe-Corton, Savigny and Beaune; run by the fifth generation (Nathalie Tollot and cousins).
