Tasting Note
Bright red and black cherry, blackberry, violets, earth and spice, with fresh acidity, moderate-to-firm tannins and a mineral, lingering finish.

Food Pairing
Western: roast duck, grilled duck breast, game birds, beef bourguignon, mushroom risotto, porcini pasta. Asian: Peking duck, char siu, miso-glazed salmon, soy-mushroom hot pot, shiitake and bok choy dishes.

Production Method
Hand-harvested, mostly destemmed, fermented in tank, aged ~18 months in French oak (c.228L Burgundian pièces; ~30% new for village cuvées).
