Tasting Note
Silky, lithe Pinot Noir showing cherry, red plum, violets, boysenberry, earth and gentle oak spice. Medium-bodied with bright acidity, velvety texture and moderate tannins; mineral and floral notes linger on a balanced, medium finish.
Food Pairing
Roasted or grilled duck, beef bourguignon, braised lamb, mushroom or truffle risotto; Asian: Peking duck, soy-braised short ribs, miso-glazed salmon or eggplant, umami-rich stir-fries.
Production Method
Hand-harvested, mostly destemmed fermentation in stainless tanks; matured c.18 months in French oak barrels (around 30% new). Traditional Burgundian vinification and élevage.

Domaine Tollot-Beaut is a family estate (bottling at the domaine since 1921) of about 24 ha across Beaune, Savigny, Chorey and Aloxe-Corton; run by the fifth generation (Nathalie Tollot). Known for old vines and classic Burgundian style.
