Tasting Note

Bright cherry and wild strawberry with floral lift, baking spice and light graphite. Medium-bodied, silky texture with moderate tannins, fresh acidity and an earthy, savory finish (red fruits, mushroom/forest-floor notes).

Western: roasted duck, coq au vin, mushroom risotto, grilled lamb. Asian: Peking duck, char siu, soy-glazed salmon, miso aubergine, mushroom hotpot.


Production Method

Hand-harvested Pinot Noir; mostly destemmed, cold-soaked, fermented 10–15 days with daily punch-downs; aged ~18 months in French oak (≈20–30% new for village cuvée).
