Tasting Note
Red and black cherry, blackberry, baking spice, earth and iron minerality. Ripe, structured tannins, bright acidity and a medium-long, savory finish.

Food Pairing
Roasted entrecôte, beef bourguignon, mushroom risotto; Asian: Peking duck, char siu, miso-glazed eggplant, Korean-style grilled beef (bulgogi).

Production Method
Hand-harvested; destemmed; traditional fermentation in temperature-controlled vats with ~15–20 day maceration; aged ~18 months in Burgundian barrels (≈50% new).
