Tasting Note
Red cherry, raspberry and violet with earthy, forest-floor and spicy notes; medium-bodied, structured with ripe, slightly rustic tannins and a mineral, peppery finish.

Food Pairing
Western: roast duck, entrecôte, boeuf bourguignon, mushroom dishes, aged cheeses. Asian: Peking duck, char siu, mushroom ramen, Korean BBQ (bulgogi), soy-marinated beef.

Production Method
Hand-harvested; mostly de-stemmed fermentation in stainless vats with ~15–21 days maceration; aged ~18 months in French oak (≈50% new, 228L pièces).

Vineyard Info
Domaine Tollot-Beaut is a family-run Burgundy domaine (since late 1800s) owning ~24 ha. Les Vercots is a mid-slope Aloxe-Corton Premier Cru on deep limestone-clay, south-facing exposures.
