Tasting Note
Medium-bodied Pinot Noir with red cherry, raspberry, violet, earth and subtle black-pepper/graphite notes. Silky, powdery tannins, mineral lift and a precise, gently persistent finish.

Food Pairing
Western: roast duck, roast lamb, beef bourguignon, mushroom risotto. Asian: Peking duck, char siu pork, soy‑glazed mushrooms, miso‑ramen with pork.

Production Method
Hand-harvested, destemmed; fermentations ~10–15 days with regular punch-downs; aged 16–18 months in French oak (≈20–30% new). Low yields and careful, traditional Burgundian vinification.

Domaine Tollot-Beaut is a fifth-generation family domaine (est. late 1800s) farming ~24–25 ha across the Côte de Beaune (Aloxe, Beaune, Savigny, Chorey). Known for old vines, manual work and estate bottling since 1921.
