Tasting Note
Concentrated red and black cherry, blackberry, violet and spice with subtle cedar and mineral lift. Silky texture, supple fine-grained tannins and a long, savory finish with blood orange and earthy undertones.

Roasted beef, duck à l'orange, venison with red-wine sauce, mushroom risotto; Asian: Peking duck, miso-glazed salmon, char siu, Korean bulgogi, soy-simmered mushrooms.

Production Method
Hand-harvested Pinot Noir; partial/full destemming; fermentation in wooden/concrete vats with daily punchdowns (15–20 days); malolactic fermentation; 14–18 months ageing in French oak (25–50% new).

Domaine Tollot-Beaut, family estate since 1880 (c.24 ha). Les Fournières vines ~40–50 years old on limestone-clay soils; east-facing, low yields, traditional Burgundian viticulture.
