Tasting Note
Ripe red and black cherry, raspberry and bramble with violet florals, warm earth and iron notes. Fine, powdery tannins, pronounced minerality and spice; medium-plus body with a savory, persistent finish.

Western: roast duck, grilled lamb, mushroom risotto, beef bourguignon, roasted game birds. Asian: Peking duck, char siu, miso-glazed aubergine, shiitake hot pot, braised beef with soy and star anise.
Production Method
Hand-harvested Pinot Noir (mostly de-stemmed); fermented in vats and aged ~18 months in French oak (≈30% new Burgundian pièces) using traditional Burgundian élevage.

Domaine Tollot-Beaut, based in Chorey-lès-Beaune, has bottled since 1921 and farms ~24 ha across the Côte de Beaune. Fournières parcels are older-vine plantings (c.50 years), on poor stony soils yielding concentrated fruit.
