Tasting Note

Bone-dry, pale straw with sharp yeast and toasted almond aromas, saline and green-apple citrus notes; light-bodied, crisp acidity and a long, slightly bitter almond finish.

Tapas, olives, almonds, Iberian jamón, grilled fish, seafood, oysters; Asian: sushi, sashimi, tempura, grilled prawns, miso-style dishes.


Production Method

Fermented from Palomino, fortified to ~15% to promote flor, then biologically aged under flor in American oak butts using the traditional criaderas-and-soleras (minimum ~2 years).
