Tasting Note
Fresh honeysuckle and citrus rind with brioche and cinnamon; a taut, textural palate of white peach, ginger and toasted almond, lively acidity and subtle mineral/oak providing length and focus.

Food Pairing
Western: roast chicken, creamy seafood pasta, grilled Moreton Bay bugs, buttered lobster. Asian: miso-glazed cod, sushi/sashimi (fatty tuna), Cantonese roast duck, Thai coconut-based dishes, lightly spiced Malaysian prawn curry.

Production Method
Hand-picked organic fruit; pressed with light settling. Native fermentation in 1–2 year French oak hogsheads and concrete eggs, 10 months ageing with regular bâtonnage, light fining and filtration.
