Tasting Note
Aromatic, lifted Grenache with wild strawberry, raspberry, rose petal, dried herbs, white pepper and savory earth. Medium-bodied, silky texture, bright acidity and fine tannins, finishing long and spicy.

Western: roast lamb, pork belly, duck, roasted mushrooms, charcuterie. Middle Eastern/North African: lamb tagine, spiced kofta, mezze. Asian: char siu, Korean BBQ, miso-glazed eggplant, teriyaki salmon, mildly spicy Sichuan dishes.

Production Method
Dry‑grown old bush vines; hand‑picked; ~50% whole‑bunch wild ferment; gentle foot‑press; 8 months in 500L puncheons & 300L used French oak hogsheads; bottled unfined and unfiltered.
