Tasting Note
Aromatic, fragrant and almost pinot-like. Cranberry, wild cherry and spice with silky texture, rose and herbal lift, bright acidity and a cool, long finish.

Food Pairing
Western: roast lamb, duck breast, mushroom risotto, charcuterie and aged cheeses. Asian: Moroccan/North African tagines, Korean BBQ, Peking duck, Sichuan‑style eggplant, char siu pork.

Production Method
Hand‑picked; 50% whole‑bunch; gentle foot‑press to initiate wild fermentation; aged ~6 months in used 300L French oak hogsheads; bottled unfined and unfiltered.
